No sugar coated answer is available, at first, it can be a definite challenge to give up gluten-baked goods. Even though your body can’t tolerate gluten, cutting it out cold turkey requires an adjustment period. It can be challenging both physically and mentally because many wheat/gluten-based foods are comforting, delicious, and satisfying (even though they made you feel sick). But take heart, it gets easier with time.
When you begin the elimination phase, it’s important to remember that you’re letting go of the gluten, not the foods. You can still have chocolate chip cookies hot from the oven, fluffy pancakes and waffles, piping hot pasta, fresh baked breads, pizza, and more. The only thing missing is the gluten, replaced with other gluten-free flours, grains, and other ingredients.
You will feel so much better living a life without the symptoms provoked by gluten, this feeling will more than compensate for the initial difficulty in giving it up.
