The early Egyptians likely invented the fig roll in its early form.
Back then, it was a simple confection of preserved figs wrapped in a flour-based dough, which was then hand-rolled.
How do they get the fig inside a Fig Newton?
The easiest way to visualize it is to think of a funnel inside of a larger funnel.
Put fig paste into the inner funnel and cookie dough into the outer funnel.
Take a plunger and force both out through the small end of the funnel at the same time.
You’ll get a rope of fig jam surrounded by cookie dough.
Flatten it out, used during bake it, and then splice it into small pieces.
That’s the basic idea of how fig and cookie are extruded together to make a fig cookie.
